Meet Dakota Slim
They call me Dakota Slim, although I’m not all that slim. My interest in cooking goes back a few years, but not as far back as the Dakotah Territory. In the late 30’s, my mom taught home economics. At home in the kitchen, she let me clean up more than she let me cook. Cooking got into my blood, and before I was out of high school, I started catering for large groups.
Along about 1973, I built a cooker out of a thousand gallon barrel that I found in the ditch. (It had a dent in it.) One of my first clients was the church in Walcott, ND for a family reunion made up of 485 Jordheim, and soon after, I began Bar-B-Q-ing for large groups—weddings, appreciation days, etc. That’s when I first developed my 5-Alarm Bar-B-Q sauce. It seemed natural to call it Norwegian Hot, since most of my relatives and clients were Norwegians.
A call came for horse radish to embellish beef, ham and pork, so I started digging horse radish out of the ground and grinding it myself. I noticed people were trying it but throwing it away, because the product was too hot, so I developed a blend using horse radish and apples, and the result was, naturally, my famous Apple Horse Radish.
Over the years I developed dry rubs (marinates) for different types of meat. As tastes changed, I came up with a hotter Bar-B-Q sauce, which I originally called 911 Screamer. After the attack on the twin towers in New York, I humbly renamed it Prairie Fire.
A certified inspected kitchen on the farm was my original place of business where I made my own sauces, and since I shipped some of my products to Norway, I can honestly say “I’m internationally known.” (That slogan is right on the label.)
Since 1998, my full product line has been produced in Hillsboro, ND, at Full Service Food, and that’s when I began to sell my products regionally. In 2004 I joined Pride of Dakota, and a year later I came dangerously close to making a profit, so you can see I’m a growing business.
I continue to develop more products for resale. This is a business that I have been at for thirty years or more, and if the good Lord’s willing and the creek don’t rise, I’ll be around for thirty more.
